Job Summary:
We are seeking talented culinary professionals to join the Carbone Group’s team at Atlantis, The Royal. The available positions include Chef de Partie, Demi Chef de Partie, Commis 1, Commis 2, and Commis 3. Ideal candidates will have a passion for Italian-American cuisine and experience in high-end, high-volume restaurants, delivering exceptional quality food in a fast-paced environment.

 

Responsibilities:

  • Prepare and cook dishes to the highest standards following the Italian-American culinary style of Carbone.
  • Assist in the preparation and service of all sections, ensuring consistency and excellence in food quality.
  • Oversee kitchen operations and ensure compliance with hygiene and safety standards.
  • Monitor food inventory, ensuring stock levels are maintained and properly rotated.
  • Train and mentor junior kitchen staff, ensuring smooth operations and high performance.
  • Collaborate with the kitchen team to innovate and improve menu items while maintaining the restaurant's brand standards.
  • Ensure proper portion control and minimize waste by maintaining accurate records of ingredients used.
  • Take ownership of your assigned kitchen section, ensuring it is clean, organized, and fully equipped.
  • Adapt to a high-volume environment, ensuring timely delivery of dishes during peak service hours.
  • Work closely with front-of-house staff to address guest feedback and ensure a seamless dining experience.

 

Requirements:

  • Proven experience in a similar role within a fine-dining, high-volume restaurant, ideally focusing on Italian-American cuisine.
  • Strong understanding of food safety and sanitation standards.
  • Ability to work in a fast-paced, high-pressure environment while maintaining attention to detail.
  • Excellent communication skills and the ability to work well as part of a team.
  • Passion for culinary arts with a drive to continually improve and innovate.
  • Strong multitasking and organizational skills, with a proactive and hands-on approach.

 

Level of Education:
Diploma or certification in Culinary Arts or a related field preferred.

 

Work Hours:
Full-time, flexible hours including evenings, weekends, and holidays.

 

Experience in Months:
Minimum 12–36 months of experience, depending on the position applied for.
