Job Summary:
We are seeking an experienced Sous Chef to join the team at Dinner by Heston at Atlantis, The Royal. The Sous Chef will assist the Chef de Cuisine in managing kitchen operations, ensuring high culinary standards, maintaining proper hygiene, and coordinating with other departments to deliver exceptional dining experiences.

 

Responsibilities:

  • Assist in the management of all kitchen operations, ensuring adherence to high standards and protocols.
  • Supervise and train kitchen staff to maintain service quality and efficiency.
  • Oversee daily food preparation, portioning, and presentation according to the restaurant's guidelines.
  • Ensure strict hygiene and sanitation practices in all food preparation areas.
  • Monitor inventory levels and ensure sufficient supplies are available to meet service needs.
  • Coordinate with the front-of-house team to ensure seamless service during peak hours.
  • Maintain a strong focus on food quality, presentation, and consistency across all dishes.
  • Assist with menu development and introduce innovative dishes in collaboration with the Chef de Cuisine.
  • Enforce health and safety regulations, including food handling and storage standards.

 

Requirements:

  • Proven experience in a Michelin-starred restaurant or equivalent fine dining establishment.
  • Excellent knowledge of international cuisine, with a particular focus on modern and innovative cooking techniques.
  • Strong leadership and organizational skills, with the ability to motivate and mentor a team.
  • Ability to work under pressure in a fast-paced kitchen environment.
  • Strong attention to detail and commitment to maintaining high culinary standards.
  • Knowledge of food safety and hygiene regulations.

 

Level of Education:
Culinary diploma or equivalent certification in professional cookery is preferred.

 

Work Hours:
Full-time position; availability to work shifts, including evenings, weekends, and holidays.

 

Experience in Months:
Minimum 2-3 years of experience in a similar role, with at least 1-2 years in a Michelin-starred restaurant or equivalent fine dining setting.
