Job Summary:
As a Pastry Sous Chef at Atlantis Dubai, you will support the Pastry Chef in overseeing the daily operations of the pastry section, ensuring the delivery of high-quality desserts and baked goods. You will manage a team of pastry chefs, ensuring consistency and creativity, while adhering to safety and hygiene standards.

 

Responsibilities:

  • Assist in leading and managing the pastry team, ensuring smooth operations in the kitchen.
  • Ensure all pastries, desserts, and baked goods meet quality standards and presentation requirements.
  • Create new and innovative dessert menus in collaboration with the Executive Chef.
  • Monitor stock levels and place orders for ingredients and supplies as needed.
  • Oversee the preparation and baking of all pastries, ensuring consistency in taste and texture.
  • Enforce safety, sanitation, and hygiene standards within the pastry kitchen.
  • Train, mentor, and develop junior pastry chefs to improve their skills and knowledge.
  • Coordinate with other kitchen sections to ensure timely preparation and delivery of all pastry items.
  • Ensure compliance with food safety regulations and maintain cleanliness in the work area.
  • Manage inventory and control food costs while minimizing waste.
  • Ensure proper storage and labeling of all ingredients to maintain freshness and quality.
  • Assist in managing the pastry kitchen's financial performance by controlling costs and maximizing revenue opportunities.

 

Requirements:

  • Education: Diploma in Culinary Arts or Catering with a focus on pastry.
  • Experience: Minimum of 3 years of professional pastry experience, preferably in a 5-star hotel or fine dining establishment.
  • Skills:
    • Expertise in pastry techniques and dessert presentation.
    • Strong leadership and team management abilities.
    • Excellent time management and organizational skills.
    • Creativity in developing new pastry offerings.
  • Attributes:
    • Attention to detail and passion for creating high-quality desserts.
    • Ability to work under pressure in a fast-paced kitchen environment.
  • Other Requirements:
    • Flexibility to work in shifts, including weekends and holidays.
    • Knowledge of food safety regulations and commitment to maintaining a clean and safe work environment.
