Job Summary:
As a Pastry Sous Chef at Atlantis Dubai, you will support the Pastry Chef in overseeing the daily operations of the pastry section, ensuring the delivery of high-quality desserts and baked goods. You will manage a team of pastry chefs, ensuring consistency and creativity, while adhering to safety and hygiene standards.
Responsibilities:
- Assist in leading and managing the pastry team, ensuring smooth operations in the kitchen.
- Ensure all pastries, desserts, and baked goods meet quality standards and presentation requirements.
- Create new and innovative dessert menus in collaboration with the Executive Chef.
- Monitor stock levels and place orders for ingredients and supplies as needed.
- Oversee the preparation and baking of all pastries, ensuring consistency in taste and texture.
- Enforce safety, sanitation, and hygiene standards within the pastry kitchen.
- Train, mentor, and develop junior pastry chefs to improve their skills and knowledge.
- Coordinate with other kitchen sections to ensure timely preparation and delivery of all pastry items.
- Ensure compliance with food safety regulations and maintain cleanliness in the work area.
- Manage inventory and control food costs while minimizing waste.
- Ensure proper storage and labeling of all ingredients to maintain freshness and quality.
- Assist in managing the pastry kitchen's financial performance by controlling costs and maximizing revenue opportunities.
Requirements:
- Education: Diploma in Culinary Arts or Catering with a focus on pastry.
- Experience: Minimum of 3 years of professional pastry experience, preferably in a 5-star hotel or fine dining establishment.
- Skills:
- Expertise in pastry techniques and dessert presentation.
- Strong leadership and team management abilities.
- Excellent time management and organizational skills.
- Creativity in developing new pastry offerings.
