Job Summary:
We are seeking an experienced and dedicated Hygiene Manager to join the team at One&Only Royal Mirage Hotel in Dubai. The Hygiene Manager will be responsible for establishing and maintaining a comprehensive food safety management system, ensuring full compliance with national and international food regulations. This role is critical for safeguarding food quality, improving operational processes, and promoting environmental sustainability across the resort.
Responsibilities:
- Implement and manage a robust food safety and hygiene system in line with property goals and long-term strategy.
- Develop and enforce food safety standards, ensuring compliance with local and international regulations.
- Conduct regular hygiene audits and inspections to measure performance against established standards.
- Maintain up-to-date documentation on all food safety standards, ensuring compliance and timely updates based on new regulations or internal changes.
- Collaborate with other departments to align food safety initiatives with broader business goals.
- Conduct supplier audits and assessments to ensure product quality, and approve new suppliers based on audit results.
- Train staff in food safety and hygiene practices, providing both basic and refresher courses.
- Oversee the implementation of environmental policies related to waste management, recycling, and conservation, ensuring alignment with global standards.
- Liaise with Dubai Food Control Authorities and third-party labs for testing and regulatory compliance.
- Investigate and address guest-related food safety complaints, analyzing causes and recommending corrective actions.
- Lead efforts in environmental sustainability, including promoting awareness and implementing environmental management systems.
- Support the opening of new outlets by reviewing layouts to ensure compliance with food safety laws and regulations.
Requirements:
- Strong knowledge of food safety management systems, with specific experience in HACCP and other industry certifications.
- Proven ability to develop and implement SOPs related to food safety, quality control, and hygiene.
- Expertise in conducting audits, inspections, and performance assessments in food safety and environmental management.
- Excellent communication and leadership skills, with the ability to train and motivate staff on food safety and hygiene practices.
- Ability to liaise effectively with regulatory bodies and external stakeholders, ensuring compliance and managing supplier relationships.
- Strong problem-solving skills with the ability to investigate, analyze, and resolve food safety-related issues.
Level of Education:
Master’s degree in Food Science, Food Technology, or a related field. Advanced certifications in HACCP (Level 3) and Food Safety (Level 4) required.
Work Hours:
Full-time, flexible hours, including weekends and holidays as necessary.
Experience in Months:
A minimum of 60 months (5 years) of experience in Food Hygiene and Quality Management, with exposure to the food industry or retail food industry, including experience in supplier quality assurance and online quality assurance systems.
