The role of the F&B Cost Controller at Waldorf Astoria Dubai International Financial Centre is to analyze Food & Beverage costs and control factors to ensure the implementation of cost-effective measures throughout the Food & Beverage department.

What will I be doing?

The F&B Cost Controller at Waldorf Astoria Dubai International Financial Centre will provide an effective auditing system for the activities of the Hotel as well as a summary of costs which is required by the Finance & Accounting division to prepare monthly reports. Will be also in charge to provide to the Director of F&B and Finance Manager the necessary financial information to assist in effectively managing profit centers.

The job description of a Food and Beverage Cost Controller includes the following key responsibilities:

  • Menu Costing:Calculate and analyze the costs of ingredients and materials used in various menu items. This involves understanding portion sizes, recipes, and the current market prices of food and beverage items.
  • Inventory Management: Monitor inventory levels of food and beverage items, track usage, and ensure that inventory turnover is optimized. Implement inventory control measures to prevent overstocking or wastage.
  • Purchasing and Procurement: Work closely with the procurement team to ensure that the best quality ingredients and materials are sourced at optimal prices. Negotiate with suppliers to secure favorable terms and discounts.
  • Vendor Management: Maintain relationships with suppliers and vendors, ensuring timely deliveries and accurate invoicing. Verify the accuracy of received orders and resolve any discrepancies.
  • Cost Analysis and Reporting:Regularly analyze food and beverage costs, comparing actual costs to budgeted costs. Prepare and present reports to management detailing cost trends, deviations, and recommendations for cost-saving measures.
  • Waste Reduction: Implement strategies to minimize food and beverage wastage, such as portion control, proper storage techniques, and efficient production processes.
  • Menu Engineering: Collaborate with chefs and culinary teams to optimize the menu mix by identifying high-margin items and encouraging their promotion.
  • Standard Operating Procedures: Develop and implement standard operating procedures (SOPs) for food and beverage cost control, including guidelines for purchasing, receiving, storage, and production.
  • Training and Communication: Educate the team members about cost control practices, including proper portioning, waste reduction, and cost-conscious decision-making.
  • Compliance: Ensure compliance with health and safety regulations, as well as any legal and industry standards related to food and beverage operations.
  • Budget Development:Collaborate with management to develop budgets for the food and beverage department. This includes setting cost targets and forecasting expenses based on historical data and anticipated business levels.
  • Continuous Improvement: Identify opportunities for process improvements, automation, and efficiency enhancements within the food and beverage cost control process.

What are we looking for?

  • Support Accounts Payable function at hotel by communicating with other departments and SSC_AP
  • Prepare MPO’s as and when required for invoices, final settlements etc.
  • Direct emails related to accounts payable to concerned team member at SSC level.
  • Prepare vendor creation form as and when required
  • Organize weekly payment through SSC RAK. Promptly follow-up on the important and urgent payments with SSC when required.
  • Resolve any discrepancies as arising relating to Accounts Payable.
