Job Summary:
The Chef de Partie - Pastry is responsible for overseeing the pastry section of the kitchen, ensuring high-quality production of pastries and desserts while adhering to the hotel’s standards. This role involves supervising junior kitchen staff, maintaining kitchen hygiene, and contributing to the overall success of the pastry operations.
Responsibilities:
- Oversee the daily operations of the pastry section, ensuring timely and consistent production of high-quality pastries.
- Supervise and train junior chefs, ensuring they follow recipes and maintain kitchen standards.
- Assist in the preparation and presentation of breakfast pastries, desserts, and baked goods as per menu requirements.
- Ensure cleanliness and organization of the pastry kitchen, following all hygiene and safety protocols.
- Collaborate with the Executive Chef and other kitchen staff to develop new dessert offerings and seasonal menus.
- Monitor stock levels, order supplies, and manage inventory for the pastry section.
- Maintain portion control and monitor food costs to ensure profitability.
- Ensure all kitchen equipment is properly maintained and in good working order.
- Adhere to health and safety regulations and ensure compliance with kitchen hygiene standards.
- Support the team during service periods to ensure efficient kitchen operations.
Requirements:
- Strong knowledge of pastry techniques, baking methods, and kitchen management.
- Ability to lead and train a team in a fast-paced environment.
- Excellent time management and organizational skills.
- Comprehensive understanding of food hygiene and safety standards.
- Creative and innovative in dessert presentation and flavor combinations.
Level of Education:
- Qualification in Kitchen Production or Management is preferred.
Work Hours:
- Flexible schedule, including early mornings, evenings, weekends, and holidays.
Experience in Months:
- Minimum 24 months as Chef de Partie or 36 months as Demi Chef de Partie in a high-standard hotel or large restaurant, preferably with luxury brands.
