Job Summary:

The Assistant Head Sommelier at Dinner by Heston Blumenthal works closely with the Head Sommelier to curate and maintain a premium wine selection, enhancing guest experiences through expert wine pairing, recommendations, and knowledge. This role is integral in upholding Atlantis' commitment to luxury and extraordinary dining experiences.

 

Responsibilities:

  • Assist in updating the wine list, sourcing, ordering, and managing wine stock rotation.
  • Provide expert wine pairing recommendations tailored to guest preferences and menu selections.
  • Ensure wines are served at optimal temperatures with the appropriate glassware.
  • Identify upselling opportunities to enhance guest satisfaction and revenue.
  • Educate and train team members on wine selections, service standards, and pairing techniques.
  • Maintain wine cellar organization, inventory accuracy, and adherence to safety standards.
  • Collaborate with the Food and Beverage team to elevate guest dining experiences.

 

Requirements:

  • WSET Level 2 certification or equivalent qualification.
  • Strong understanding of wine pairing, food service, and luxury hospitality.
  • Ability to communicate effectively and build rapport with guests.
  • Experience in maintaining wine inventory, creating wine lists, and training staff.

 

Level of Education:

  • High school diploma or equivalent; hospitality or sommelier certifications preferred.

Work Hours:

  • Flexible, including evenings, weekends, and holidays.

Experience in Months:

  • Minimum 24 months in a luxury hotel or fine-dining establishment in a sommelier role.
